Hope everyone had a nice Thanksgiving! For my favorite holiday of the year, I cook for HOURS and DAYS… and I LOVE it. I always brine the turkey and this year, right before it went in to the oven, I slathered pork belly on top (Sort of like self-basting). Pork + Turkey= Porkey?

Hisami!!! That is freaking amazeballs! The pork belly on the turkey is an excellent idea…I may have to steal that when I try my hand at turkey.

Thanks Vicky! I actually can’t take credit for that. It’s an old classic way of roasting turkey by James Beard using salted pork. But since I brined my turkey, I used fresh pork belly to avoid over salting. Steal it away!!
