Hearty, Healthy and Delicious! My Kale Persimmon Salad Recipe

This is for those who tried and loved my Kale and Persimmon Salad. Try making it at home and let me know how it turned out!

The color is beautiful isn’t it?

Miss B’s Kale and Persimmon Salad
5-6 appetizer portion or 3 meal portion

1 cup of cooked Forbbidden Rice, room temperature
7 oz of Kale, stem removed (or large bowl full of kale)
juice from 1 lime
1/2 tsp salt
2 cups of diced red peppers (1/4″ squares) about 2 large red peppers
2 cups of diced firm fuyu persimmons (1/4″ squares) about 3 large or 4 small fuyus

Scallion Ginger Dressing
1 bunch of scallions sliced in to 1/8″ rounds (about 7-8 scallions)
1/2 Tbsp grated ginger
2 Tbsp Sesame oil
3 Tbsp Rice wine vinegar
1 Tbsp Fish Sauce
2 Tbsp Soy Sauce
1 Tbsp crushed sesame seeds
1/4 tsp shichimi peppers or dried chili pepper flakes

1. Place sliced kale in to 1/4″ ribbons. In a large bowl, massage lime juice and salt and set it aside for 20-30 minutes.
2. Dice red peppers and persimmons and place it in another bowl.
3. In a smaller bowl, mix in all the scallion ginger dressing ingredients.
4. Wash and rinse lime and salt off of kale and spin dry in the salad spinner.
5. In a large bowl, place kale, diced red peppers, persimmons, forbidden rice and 1/4 cup of scallion ginger dressing. Toss it well… use your hands if you need to!
6. Enjoy~

Here’s some easy and addictive spiced chick pea snack.

For dessert, I made small baked sweet potatoes.

Holiday Baking & Cooking

My friend Karis and I’ve been baking together every holiday season for past 4 years. Partially because we enjoy baking together and also to give away the treats as holiday gifts to our friends and to shelters near by us.

This year, we baked lemon bars, chocolate snowball cookies, rugelach, zucchini bread, apple cakes, chocolate chip cookies, matcha cookies and cupcakes.

For our Christmas Potluck at our friends house, I made Balsamic glazed Pork Shoulder, Kale and Persimmon Salad and Cauliflower pancakes with cranberry sauce.

Gingerbread House for the Holidays!

This Saturday, I invited few friends over and had a Gingerbread House making marathon. This is an all-day extravaganza and you need to be ready and motivated to work. We started at 11 am and I was done with my house at 1am! Here are the results:

Sick of turkey yet? Not me!

Every year, we buy the best turkey around and spend hours cooking. No matter how great it turns out, after eating turkey for 5 consecutive meals… you might get bored of it. We had few friends over yesterday glazing leftovers and our stuffing, mashed potatoes and gravy is done. I love turkey but it’s sad without any sides right? So here’s my leftover dish this year. Turkey Green Thai Curry. I used leftover turkey and leftover vegis. Absolutely delicious!

Hope everyone had a nice Thanksgiving! For my favorite holiday of the year, I cook for HOURS and DAYS… and I LOVE it. I always brine the turkey and this year, right before it went in to the oven, I slathered pork belly on top (Sort of like self-basting). Pork + Turkey= Porkey?

I’m way too busy to take photos right before the dinner but I managed to take few.

Mixed Berry Tart with Lemon Poppy Seed Curd

My friend invited us over for a Sunday Night Dinner. She insisted that we don’t bring anything… but I can’t go empty handed knowing that they are spending hours cooking for us! Besides, I think it’s rude to bring nothing. SO, I made Whitney Chen’s All season Tart again but with berries this time. Also, I made Melissa Clark‘s Lemon Poppy Seed Curd. Awesome combination! Let’s see if they like them~
