I love eggplant and corn combination. We had some ground bison in the freezer, so I made a pot of hearty stew. I’m gonna keep it short since I’m practically falling a sleep writing this blog. Tonight, I made hearty bison stew with eggplant and corn. I also made broccoli and heirloom tomato salad. I can’t wait to have some for lunch tomorrow. Stews always taste better the next day.
