Fantastic Eggplant dish

I made crab ravioli the other day but I still had lots of crab meat left over. I also had 2 large Japanese eggplants sitting in the fridge… so I went out and got some ground pork and here’s my dish. Garnish has chopped hot red pepper which I harvested & pickled from our porch mini-garden. This dish was a success! SOO good.
