Berkshire Pork Belly Buns

The other day, I purchased this amazing organic Berkshire pork belly on I was pretty happy that it arrived on Friday since these pork fat takes a while to cook. Before I started to work on my pork belly, I pickled some radishes. The picture is just the end roots… which sat beautifully on my cutting board so I took a snapshot of it.

and this is what I found in my package.

I seared the belly for 15 min., steamed it for 2 hours, and braised it for 2 hours. Takes a while but totally worth it.

I love these little treats. It took me almost 6 hours to make them (including the time to make the buns), but TOTALLY worth it!
